Classics From the American South
The Lowcountry & the Gullah Geechee
The Gullah Geechee culture—which populates a region now called the Lowcountry, the coastal area spanning from the Carolinas to northern Florida—offers cuisine that best preserves Western African influence. This includes large roasts, rice, and crops like okra, cowpeas, Georgia peaches, and sweet corn, plus seafood from the Atlantic.
