The smoky taste of grilled steak goes so well with sweet onions and spicy salsa in this easy meal.

Ingredients

Cooking spray

4 spray(s)

Onion

1 medium, Vidalia, thickly sliced

Uncooked summer squash

1 medium, yellow variety, sliced lengthwise

Table salt

tsp, or to taste

Uncooked lean flank steak

12 oz

Black pepper

tsp, or to taste

Salsa

½ cup(s)

8" low carb flour tortilla

4 tortilla(s)

Instructions

  1. Preheat grill or grill pan to medium-high.
  2. Lightly coat onion and squash with cooking spray and season with salt. Grill vegetables until soft, about 5 minutes. Meanwhile, season steak with salt and pepper on both sides, and grill until cooked through, 3 to 6 minutes depending on desired degree of doneness. Remove steak from grill and slice into thin pieces against the grain.
  3. To assemble fajitas, spoon 2 tbsp salsa onto each tortilla. Top each with 1/4 of onions, squash, and steak. Serve.
