Love Mexican food? You can’t go wrong with the punchy flavours in this easy dish.

Ingredients

Sweetcorn, tinned, drained

80 g

Black eyed beans, cooked

1 can(s), large, drained, tinned, drained and rinsed

Rocket

50 g, baby

Cherry Tomatoes

100 g, halved

Cucumber

½ individual, extra large, small, trimmed and peeled into ribbons

Red pepper

½ medium, finely chopped

Radish

2 medium

Tuna in spring water, drained

1 can(s), medium, drained

Coriander, fresh

2 tablespoon(s), chopped

Lime Juice, Fresh

1 tablespoon(s)

Olive Oil

2 teaspoon(s)

Chilli Powder

½ teaspoon(s), level

Instructions

  1. Combine the sweetcorn, black beans, rocket leaves, tomatoes, cucumber, pepper, radishes, tuna and coriander in a large bowl and set aside.
  2. In a small jug, whisk together the lime juice, oil and chilli powder. Season to taste.
  3. Drizzle the dressing over the salad and toss to coat. Divide between bowls and serve.
