Ingredients

Sourdough Bread

120 g

Calorie controlled cooking spray

4 spray(s)

Garlic

1 clove(s)

Salt

1 pinch

Pine nuts

1 tablespoon(s), toasted

Parmesan Cheese

1 tablespoon(s), grated, (vegetarian), grated

Lemon Juice, Fresh

30 ml

Olive Oil

1 tablespoon(s)

Instructions

  1. Preheat the oven to 200°C, fan 180°C, gas mark 6. Put the sourdough bread on a baking sheet and mist with calorie controlled cooking spray.
  2. Season with rock salt, then bake in the oven for 8-10 minutes, or until crisp and golden, turning halfway through. When cooked, remove from the oven and rub the slices with the cut sides of 1 peeled and halved garlic clove.
  3. Meanwhile, put the basil leaves, pine nuts, Parmesan cheese, lemon juice and olive oil in a mini food processor and blitz until smooth. Add a splash of water to loosen if the pesto is too thick. Season to taste, then serve with the toasts.
