Ingredients

New potatoes, raw

500 g

Egg, whole, raw

2 medium, raw

Spring Onions

4 medium, thinly sliced

Chives, Fresh

1 teaspoon(s), snipped

0% fat natural Greek yogurt

6 tablespoon(s)

Reduced Fat Mayonnaise

3 tablespoon(s)

Wholegrain Mustard

1 teaspoon(s), level

Instructions

  1. Cook the small waxy potatoes in a pan of boiling water for 10 minutes until just cooked, then cool under running water and cut into chunks.
  2. Boil the eggs for 9 minutes, then cool under running water, peel and chop. Put the potatoes and eggs into a bowl with spring onions and a handful of snipped chives.
  3. Mix together the yogurt, mayonnaise and wholegrain mustard, then stir into the salad. Season to taste, mix well to combine, then serve.
