Ingredients

Calorie controlled cooking spray

4 spray(s)

Onion

2 medium, finely chopped

Carrots, raw

2 medium, finely chopped

Turmeric

½ teaspoon(s)

Cauliflower, Raw

750 g, 'riced' (see cook's tip)

Peas, fresh or frozen

125 g

Vegetable stock cube

½ cube(s), made with 150ml water

Instructions

  1. Mist a large nonstick wok or frying pan with cooking spray and set over a low heat. Cook the onions and carrots for 10-15 minutes, until very soft and just starting to turn golden.
  2. Add the spices and cook, stirring, for 2-3 minutes until fragrant. Stir in the cauliflower and peas until combined, then pour over the stock and cook, stirring continuously, for 5 minutes, until the cauliflower and peas are tender.
  3. Cook’s Tip: To make your own cauliflower ‘rice’, simply blitz 500g trimmed cauliflower florets in a food processor, or grate on the coarse side of a grater, until the mixture resembles rice.
