Ingredients

Courgette

500 g, baby

Sunflower Oil

1 tablespoon(s)

Parmesan Cheese

25 g, vegetarian, very finely grated

Instructions

  1. Preheat the oven to 120°C, fan 100°C, gas mark 1. Trim the courgettes, then thinly slice them lengthways into long, thin strips – use a mandoline if you have one, or simply cut as thin as you're able to with a sharp knife.
  2. Transfer the courgettes to a wire rack set over a large baking sheet, brushing them with the oil as you go. Line up the courgette strips side-by-side, so they are just touching.
  3. Season to taste, then scatter over the grated cheese. Bake for 1 hour 30 minutes until the courgettes are crisp and golden, then serve.
