Bursting with texture and colour, this fresh summer salad is perfectly balanced with spinach, sweet strawberries and pumpkin seeds

Ingredients

Balsamic vinegar

1½ teaspoon(s)

Olive Oil

2 teaspoon(s), extra virgin

Garlic

½ clove(s), crushed

Dijon Mustard

¼ teaspoon(s), level

Spinach

100 g, young leaf

Strawberries

120 g, hulled and halved

Avocado

½ medium, sliced

Red onion

½ small, finely sliced

Chicken breast, skinless, grilled

2 individual, medium, sliced

Pumpkin Seeds

½ tablespoon(s)

Instructions

  1. Whisk together the balsamic vinegar, extra virgin olive oil, garlic, Dijon mustard and season.
  2. Put the spinach in a bowl with hulled and halved strawberries, sliced avocado, sliced red onion and sliced, cooked chicken fillets.
  3. Drizzle over the dressing and toss to coat. Serve topped with pumpkin seeds.
