This classic soup is comfort in a bowl.

Ingredients

Carrots, raw

3 medium, peeled and chopped

Onion

1 medium, chopped

Vegetable stock cube

½ cube(s), 300ml stock

Coriander, fresh

20 g

Instructions

  1. Put the carrots and onion in a small pan with 300ml stock.
  2. Strip the coriander leaves from the stalks, then add the stalks to the pan. Bring to the boil. Reduce the heat and simmer for 20 minutes.
  3. Let cool slightly before blending. Season, stir in the coriander leaves and serve.
