Sharp blue cheese and sweet pears combine perfectly in this simple dish.

Ingredients

Pear

3 medium

Lemon Juice, Fresh

2 tablespoon(s)

Low Fat Soft Cheese

25 g

Stilton

75 g

Wholemeal bread, sliced

4 slice(s), medium

Rocket

25 g

Instructions

  1. Halve, core and slice the pears into thin wedges, then put in a small bowl and toss with half the lemon juice to stop them from turning brown. Set aside.
  2. In a small bowl, mix the soft cheese with 15g of the Stilton and the remaining lemon juice, then season to taste.
  3. Toast the bread in a toaster or under the grill. Spread with the soft cheese mixture, then top with the rocket and pear. Crumble over the remaining Stilton, then serve.
