Fresh mint is bursting with flavour and adds a cooling freshness to sweet and savoury dishes. Pair it with watermelon, chilli, feta and prawns is this oh so simple summer salad.

Ingredients

Dry rice noodles

100 g, vermicelli variety

Lime juice

cup(s), (80ml)

Fish sauce

3 tsp

Granulated stevia sweetener

1 tsp

Fresh red chilli

1 whole, deseeded, finely chopped

Watermelon

700 g, seedless, cut into 2cm pieces

Fresh mint

2 cup(s), leaves

Baby spinach

80 g

Cooked peeled prawns

750 g, tails intact

Reduced fat feta cheese

120 g

Instructions

  1. Prepare noodles following packet instructions or until just tender. Drain. Rinse under cold water. Drain. Using scissors, cut noodles into 8cm lengths.
  2. Whisk juice, fish sauce, stevia and chilli in a large bowl. Add noodles, watermelon, mint, spinach and prawns and toss to combine. Sprinkle with feta to serve.
