Notes

Preheat oven to 200°C. Lightly spray 1 red apple (quartered) with oil. Bake on a baking tray lined with baking paper for 25 minutes or until tender. Pan-fry ½ small red onion (chopped) with 1 tsp olive oil until softened. Add 150g red cabbage (shredded) and 2 tsp water. Cook until soft. Stir in 1 tsp balsamic vinegar and ½ tsp brown sugar. Season 175g lean pork loin steak (fat trimmed) with pepper. Pan-fry in a pan lightly sprayed with oil until cooked to your liking. Transfer to a plate and keep warm. Add 1 tbs light cream and ½ tsp Dijon mustard to pan and stir until heated through. Drizzle sauce over pork and serve with roast apple, cabbage mixture and steamed snow peas (sliced).
