Notes

Cook rice according to packet instructions. Spray a non-stick frying pan with oil and gently cook onion, garlic, ginger and curry powder. Add a little water if necessary to prevent sticking. Add the chicken and stir until coloured, then add all the vegetables. Simmer over low heat until vegetables are soft. Serve with rice.
