Notes

Heat a saucepan lightly sprayed with oil. cook 150g trimmed beef fillet steak, ¼ red onion (chopped) and ¼ carrot (chopped) until beef is brown. Add 1 1/2 tsp vindaloo curry paste and cook until fragrant. Add 100g canned diced tomatoes and ¼ cup beef stock. Simmer, covered, until beef is tender. Add 75g green beans (chopped), ¼ cup frozen peas and 40g cauliflower florets and cook uncovered, until vegetables are tender. Serve with ½ cup boiled basmati rice and 2 mini microwave pappadums.
