Guacamole meets edamame hummus in this mash-up that makes it that much easier (and tastier) to get your fill of non-starchy-veggie dippers. Use any leftovers as a zippy, Points®-friendly spread for sandwiches and wraps.

Ingredients

Garlic

1 clove(s)

Shelled edamame

1 cup(s), frozen, thawed

Cilantro

¼ cup(s), coarsely chopped

Fresh lime juice

3 Tbsp, (from about 2 limes)

Kosher salt

½ tsp

Avocado

1 item(s), ripe, peeled and pitted

Instructions

  1. In a food processor, pulse the garlic until finely chopped. Add the edamame and pulse until very finely chopped, stopping to scrape down the sides of the bowl as needed. Add the cilantro, lime juice, salt, and 1⁄4 cup water and process until mostly smooth. Add the avocado and process until smooth.
  2. Serving size: 1⁄4 cup
