This salad is a fresh, healthful breakfast option to start your day. You can cook the wheat berries ahead of time so the rest of the recipe comes together fast. Feel free to add 1/2 cup plain fat-free Greek yogurt for a nice addition of protein.

Ingredients

Uncooked wheat berries

1 cup(s)

Table salt

½ tsp

Apple

1 small, cored and diced

Pear

1 small, cored and diced

Orange

1 small, seedless, peeled and diced

Kiwifruit

1 medium, peeled and diced

Grapes

½ cup(s), seedless

Orange zest

½ tsp, grated

Fresh lemon juice

1 Tbsp

Peppermint leaves

1 Tbsp, chopped

Sliced almonds

4 Tbsp

Instructions

  1. Bring medium saucepan filled two-thirds with water to boil over medium-high heat; stir in wheat berries and salt. Reduce heat and simmer, covered, until berries are tender but still chewy, 45 minutes–1 hour. Drain in colander and rinse under cold running water; drain again.
  2. Combine wheat berries, apple, pear, orange, kiwifruit, grapes, orange zest, lemon juice, and mint in medium bowl. Serve, or cover and refrigerate up to 2 hours. Sprinkle each serving with 1 tablespoon almonds.
  3. Serving Size: 1 cup salad and 1 tablespoon almonds
