To make this beautiful, refreshing dessert, all you need is three ingredients, but you'll also need at least a few hours to make sure that the granita is totally frozen. All you have to do is purée chunks of watermelon and lemon juice in a blender or food processor. Add lots of fresh basil and pulse again to combine. After transferring the watermelon mixture to a pie plate or pan, you'll have to scrape the frozen bits on the edges into the center every 30 minutes or so while it freezes to get that perfect consistency. A bit of citrus juice brightens up the flavor of the granita, while fresh herbs lend a fun twist.

Watermelon

Fresh lemon juice

2 tsp

Fresh basil

2 Tbsp, chopped, plus extra for garnish

Instructions

  1. Puree watermelon and lemon juice in a large blender or food processor; add basil and pulse to combine. Pour into a pie plate or 9-in square pan and freeze for 30 minutes; stir frozen bits of fruit into center. Continue to stir and scrape frozen fruit from edges to center every 30 mins until granita is completely frozen, about 4 hours. Serve garnished with basil.
