Ingredients

Olive oil

1 tsp

Reduced sodium chicken broth

¾ cup(s), vegetable broth, or WW's Easy soup base

Uncooked fennel bulb

½ item(s), diced

Shallot

1 medium, diced

Canned diced tomatoes

¾ cup(s)

Plain fat free Greek yogurt

2 Tbsp

Fennel fronds

½ Tbsp, optional

Instructions

  1. Heat oil in small saucepan over medium heat. Add fennel and shallot. Cook, stirring, until softened, about 5 minutes. Add broth or soup base and tomatoes; bring to boil. Reduce heat and simmer until vegetables are very tender, about 10 minutes. Pour into bowl and top with yogurt; sprinkle with fennel fronds, if desired.
  2. Makes 1 serving.
