Swap in flour tortillas (or lettuce leaves) for the corn tortillas, if you prefer.

Cooking spray

Uncooked tilapia fillet

1 pound(s), four 4 oz pieces

Mexican seasoning blend

Table salt

Corn tortilla

4 tortilla(s), medium

Packaged coleslaw mix (shredded cabbage and carrots)

½ cup(s)

Shredded reduced fat Mexican-style cheese blend

½ cup(s)

Plain fat free Greek yogurt

4 Tbsp, optional

Salsa

Fresh lime juice

Instructions

  1. Preheat oven to broil. Coat fish with cooking spray. Sprinkle with Mexican seasoning and salt. Broil for 3 to 4 minutes, or until fish easily flakes with a fork.
  2. Top each tortilla with 1 fish fillet, 2 tbsp slaw mix, 2 tbsp cheese, 1 tbsp yogurt (optional), 1 tbsp salsa, and a drizzle of fresh lime juice.
  3. Serving size: 1 taco
