This recipe has a bright, citrusy flavor with an underlying hint of heat. Serve over rice with fresh diced pineapple or mango.

Ingredients

Fresh lime juice

Tequila

1 fl oz, or 2 tablespoons

Jalapeño pepper

1½ tsp, or to taste, minced and seeded

Sugar

¾ tsp

Chili powder

½ tsp, chipotle variety

Cilantro

¼ cup(s), chopped

Olive oil

1 Tbsp

Garlic

1 clove(s), minced

Table salt

½ tsp

Uncooked shrimp

1½ pound(s), jumbo variety, peeled and deveined

Instructions

  1. Stir together lime juice, tequila, jalapeño, sugar, chile powder, and 2 tablespoons cilantro in small bowl; set aside.
  2. Heat oil in large nonstick skillet over medium heat. Add garlic and salt; cook, stirring, until garlic is fragrant, about 30 seconds. Add shrimp and cook, stirring, until opaque in center, about 4 minutes. Transfer shrimp to serving platter; cover to keep warm.
  3. Add lime mixture to skillet and increase heat to high. Cook, stirring, until reduced, about 2 minutes. Pour lime mixture over shrimp; sprinkle with remaining 2 tablespoons cilantro.
  4. Serving size: 1/6 of shrimp

Notes

Serve the shrimp over hot cooked basmati or jasmine rice; 1/2 cup cooked white basmati or jasmine rice will increase the SmartPoints value by 3.
