It’s hard to believe these crisp oven-baked “fries” are totally fat-free. Crispy on the outside and tender on the inside, these sticks are reminiscent of your favorite fried potatoes with loads more flavor. Egg whites adhere the spices and help the outer texture keep some snap, while the simple blend of cumin, salt, pepper and chili powder add a Tex-Mex flavor. If you are using a hot chili powder, omit the pepper so they are not too hot. Serve with your favorite dipping sauce as an easy snack or serve alongside your favorite burger. Ready in just 30 minutes, these potatoes also pair well with fish for a fun twist on the English favorite. Kids might eat more than their share so you may want to make a double batch.

Ingredients

Uncooked potato

2 large, baking variety, scrubbed and cut into thin strips

Egg whites

2 large, lightly beaten

Ground cumin

¾ tsp

Table salt

½ tsp

Chili powder

½ tsp

Black pepper

¼ tsp, freshly ground (optional)

Instructions

  1. Preheat the oven to 425°F. Spray a large nonstick baking sheet with canola oil nonstick spray. Combine all of the ingredients in a large bowl and toss to coat. Transfer to the baking sheet and arrange in a single layer. Bake until the potatoes are barely tender, about 15 minutes. Increase the oven temperature to broil and broil 5 inches from the heat until crispy, about 10 minutes longer. Yield about 1 cup per serving.
