Spanish-style chicken and rice is a wonderful comfort food meal that is easy to prepare. Our version is ready in just an hour and uses only one pan. Brightly colored, the rice gets its jeweled yellow color from the turmeric which also adds a light earthy flavor. Green peas, tomatoes, and bell peppers pop against the rice, making this a gorgeous side dish. Leftovers reheat well for lunch another day. Serve alone as a one-dish meal or add a side of wilted spinach for even more veggies.

Ingredients

Garlic

1 clove(s), crushed

Onion

2 medium, chopped

Uncooked skinless boneless chicken breast

1 pound(s), diced

Mineral water

2 fl oz

Canned tomatoes

14½ oz, whole, peeled and chopped

Uncooked wild rice

5½ oz, long grain

Ground turmeric

½ tsp

Chili powder

tsp, or to taste

Red bell pepper

½ medium, chopped

Green bell pepper

½ medium, chopped

Celery

½ cup(s), chopped, sliced

Frozen green peas

Instructions

  1. Spray a large nonstick frying pan with cooking spray, heat, then brown garlic, onions and chicken.
  2. Add water, tomatoes, rice, turmeric and chili powder. Cover and simmer 10 minutes.
  3. Add peppers and celery and simmer 10 minutes more, stirring occasionally. Add peas and simmer until rice and peas are tender, 5 to 10 minutes. Adjust liquid if necessary.
