Let everyone assemble their favorite picnic sandwich salads into fun handheld lettuce wraps with this easy interactive lunch spread. Pick up precooked hardboiled eggs and grilled chicken from the supermarket to make this even speedier to prep. Lettuce leaves make excellent handheld wraps, and you can also serve bread on the side. Tip: If you’re having people over, you can prep the salads the day before to quickly assemble the platter just before they arrive.

Ingredients

Light mayonnaise

Celery

Red onion

3 Tbsp, chopped, minced

Dijon mustard

Canned chunk white tuna in water

8 oz, well drained

Hard boiled egg

4 item(s), large, chopped

Cooked skinless boneless chicken breast

1 cup(s), chopped

Boston lettuce

12 leaf/leaves, or romaine

Plum tomato

2 medium, cut into 12 slices

Bell pepper

1 cup(s), thinly sliced

Hamburger pickle chips

Instructions

  1. In small bowl, mix mayonnaise yogurt, celery, onion, mustard, salt, and pepper to combine. Place tuna in small serving bowl. Place eggs in second small serving bowl. Place chicken in third small serving bowl. Divide dressing among bowls and stir to combine.
  2. Arrange bowls of tuna, egg, and chicken salads on large platter. Arrange remaining ingredients around salads. Garnish with herbs (if using).
  3. Serving size: about ½ cup salad, plus garnishes
