A quick snack recipe for one is great to have on hand for busy days when you need something quick and tasty to nosh on. Ready in 5 minutes, this recipe features harissa, a North African sauce with a mild spicy kick. The yogurt gives the sauce body and cools the heat of the harissa. The cucumber is a great way to add volume and a crisp flavor in addition to a strong fiber hit. Cut some fresh celery and carrots to dip or toast some pita for a heartier snack. This dip can also serve as a flavorful sauce for chicken, pork or fish.

Ingredients

Roasted red peppers (packed in water)

½ cup(s)

Harissa paste

1½ Tbsp, (sauce)

Plain low fat Greek yogurt

1 Tbsp

Jarred minced garlic

½ tsp

Ground coriander

¼ tsp

Cucumber

½ cup(s), sliced

Instructions

  1. Combine roasted peppers, harissa, yogurt, garlic, and coriander in blender and puree. Spoon into small bowl and serve with cucumber.
