This roasted potato recipe is a classic that goes with anything from eggs to grilled chicken to burgers.

Ingredients

Cooking spray

4 spray(s)

Dijon mustard

2 Tbsp

Olive oil

1½ tsp

Rosemary

1 Tbsp, fresh, chopped

Fresh oregano

1 Tbsp, chopped

Fresh parsley

1 Tbsp, chopped

Table salt

½ tsp

Black pepper

¼ tsp

Uncooked potato

1 pound(s), cut into thick fries

Instructions

  1. Preheat the oven to 425°F. Coat a nonstick baking sheet with cooking spray.
  2. In a large bowl, combine all ingredients, except the potatoes; add the potatoes and toss to coat. Place the potatoes on the prepared baking sheet and bake, turning occasionally, until potatoes are tender but crisp, about 25 to 30 minutes.
  3. Serving size: 1/4 of potatoes
