This roasted potatoes recipe is a perennial favorite that you'll find yourself making again and again. You can enjoy them with roasted chicken, lean burgers, steak, or eggs; the possibilities are endless. It also couldn't be easier to make. First, the potatoes are tossed with a savory mixture of Dijon mustard, olive oil, and an herb medley of fresh rosemary, oregano, and parsley. They're then roasted in the oven until they're perfectly crisp-tender, which is one of our favorite ways to serve (and eat!) them. You can also change up the flavor profile by using any other fresh herbs you have on hand.

Ingredients

Cooking spray

Rosemary

1 Tbsp, fresh, chopped

Fresh oregano

1 Tbsp, chopped

Fresh parsley

1 Tbsp, chopped

Table salt

Black pepper

Uncooked potato

1 pound(s), cut into thick fries

Instructions

  1. Preheat the oven to 425°F. Coat a nonstick baking sheet with cooking spray.
  2. In a large bowl, combine all ingredients, except the potatoes; add the potatoes and toss to coat. Place the potatoes on the prepared baking sheet and bake, turning occasionally, until potatoes are tender but crisp, about 25 to 30 minutes.
  3. Per serving: 1/4 of potatoes.
