We love how quickly these flavorful, delicious sandwiches come together, as they take just 13 minutes to make and require six ingredients and one skillet. This recipe is designed for one, but you can scale up the recipe if you want to make some sandwiches for friends and family. All you have to do is first warm up the pastrami and sauerkraut, then you build the sandwiches with mustard-coated bread, the pastrami and sauerkraut, and mozzarella cheese in the same skillet. For a true delicatessen experience, enjoy this classic sandwich with a kosher pickle and coleslaw, made healthier with olive oil and vinegar instead of mayonnaise, alongside.

Mustard

2 tsp, grainy deli-variety

Reduced-calorie rye bread

2 slice(s)

Cooking spray

2 spray(s)

Turkey pastrami

3 oz, sliced

Sauerkraut

¼ cup(s), drained

Shredded fat free mozzarella cheese

Instructions

  1. Spread mustard on both slices of bread; set aside.
  2. Lightly coat a large nonstick pan with cooking spray; place over medium-high heat. Add pastrami to pan and warm through, about 1 1/2 minutes. Move pastrami to one side of pan; add sauerkraut to pan and stir it until heated through, about 2 minutes. Remove pan from heat and transfer pastrami and sauerkraut to a plate; cover and set aside.
  3. Lightly coat same pan with cooking spray and place over medium heat. Place 1 slice of bread, mustard side up, in pan; top bread with pastrami and then layer with sauerkraut and cheese. Carefully place remaining slice of bread, mustard side down, on top; gently press down with a spatula for about 2 minutes. Flip sandwich and heat for 2 minutes more; remove from heat promptly (to avoid burning bread, do not heat sandwich for more than 2 minutes on either side). Yields 1 sandwich per serving.
