We recommend using Black Mission figs for this pizza recipe, but if you can’t find them, you can swap seedless red grapes in their place. And other fresh herbs such as mint or chives are a nice addition to the basil if you have them. Otherwise, you'll love the flavor combination and presentation of this easy to make, hearty yet healthy pizza. From start to finish, you should be able to have it ready to go in just 25 minutes. This pizza is a glorious study in colors and textures that you'll find yourself making over and over again.

Ingredients

Whole wheat pita

8 oz, use four 2 oz pitas

Shredded part skim mozzarella cheese

1 cup(s)

Crumbled goat cheese

½ cup(s)

Fresh figs

12 medium, thinly sliced (or halved red seedless grapes)

Balsamic vinegar

½ Tbsp

Olive oil

1 tsp

Dijon mustard

¼ tsp

Table salt

¼ tsp

Black pepper

tsp, plus more to taste (optional)

Radicchio

2 cup(s), shredded, thinly sliced

Fresh basil

2 Tbsp, thinly sliced

Instructions

  1. Preheat oven to 500°F. On large rimmed baking sheet, place pitas. In small bowl, combine mozzarella and goat cheese. Spread cheese over pitas. Scatter fig slices on top of cheese. Bake until pitas are golden brown and cheese is melted, about 5 minutes.
  2. Meanwhile, in medium bowl, whisk vinegar, oil, mustard, salt, and 1/8 tsp black pepper. Add radicchio and basil and toss to combine.
  3. Divide salad over pizzas. Serve immediately with more black pepper (if using).
  4. Serving size: 1 pizza
