This adorable-looking, quick berry crisp is the perfect breakfast, snack, or dessert for one, but you can easily scale it up if you're serving it to friends and family. It only takes 20 minutes to make and requires just 5 ingredients, one of which is cooking spray. All you have to do is toss the blueberries, brown sugar, and ground cinnamon together, spoon into a ramekin, then sprinkle with granola cereal. Bake just 10 minutes and it's ready to enjoy. You can also top the crisp off with 2 Tbsp low-fat whipped topping for an added touch of sweetness, but that step is totally optional.

Unpacked brown sugar

Instructions

  1. Preheat oven or toaster oven to 400°F. Coat an 8-oz ramekin with cooking spray.
  2. Toss together blueberries, sugar and cinnamon in a small bowl; spoon into prepared ramekin and sprinkle with granola. Bake until heated through, about 10 minutes; let cool 5 minutes before eating.
  3. Makes 1 serving.
