Two-ingredient dough forms the base of these oh-so-colorful personal cheese pies. They're loaded with veggies but still have a layer of tomato sauce and gooey cheese hiding underneath. Though we used some fresh and some roasted vegetables, you can use any combination that you like. Roasted carrots, zucchini, and eggplant, and fresh sliced scallions, fennel, and cabbage, are also delicious toppings.

Ingredients

Plain fat free Greek yogurt

White self-rising flour

1 cup(s)

Canned tomato sauce

1 cup(s)

Shredded part skim mozzarella cheese

¾ cup(s)

Non starchy roasted vegetables without oil

1 cup(s), such as broccoli florets and chopped red onion

Fresh vegetable sticks

3 cup(s), or other chopped raw veggies such as cherry tomatoes and peppers,

Instructions

  1. Preheat oven to 375ºF. Line a baking sheet with parchment paper.
  2. Place yogurt and flour in a large bowl; stir well with a wooden spoon until just combined and then keep mixing dough in bowl with your hands until smooth (about 2 minutes of kneading). If dough is too sticky to knead, add more flour, 1 tbsp at a time, until no longer sticky. Let dough sit for 5 minutes.
  3. Place a large piece of parchment paper on a work surface and sprinkle with a little flour; place dough on paper. Use a knife to cut dough into 4 equal pieces. Use a rolling pin to roll each piece of dough into a 6-7 inch oval (or circle). Place on prepared baking sheet; bake until dough is beginning to turn lightly golden, about 18 minutes.
  4. Remove from oven and top each with ¼ cup sauce, 3 tbsp cheese, and 1 cup vegetables. Return to oven and bake until dough is cooked through, cheese is melted, and raw veggies are a tender, 5 to 7 minutes.
  5. Serving size: 1 pizza
