Vibrant in color and flavor, muhammara is a Middle Eastern dip made with red peppers, walnuts, and pomegranate molasses. It’s smoky, sweet, and spicy, thanks to the red pepper flakes, which you can adjust up or down depending on your heat tolerance. Pomegranate molasses is pomegranate juice that has been reduced, with or without sugar, to a thick, intensely flavored sweet-and-sour syrup. What’s more, this dip is easy to prepare. Throw all the ingredients in the food processor, and pulse it until it’s blended but still chunky. Serve it as an appetizer with fresh vegetables or toasted pita wedges; as a sauce over grilled meats, poultry, or roasted vegetables; or spread on sandwiches.

Instructions

  1. Put all ingredients, except oil, into bowl of a food processor; pulse until chunky.
  2. Turn on processor and pour oil through spout; stop as soon as oil is mixed in—you’re looking for a not-quite-smooth texture. Serve at room temperature.
