Our healthier version of a beloved seasonal fast-food treat uses fresh mint for the best flavor, and it leans on a surprising ingredient: frozen cauliflower rice. The veggie's mild flavor basically disappears in the milkshake, and it adds body and slushiness without watering down the taste the way crushed ice would. You can easily make this a dairy-free, vegan treat by using nondairy ice cream and coconut whipped cream.

Ingredients

Plain unsweetened almond milk

½ cup(s)

Fresh mint leaves

4 leaf/leaves, divided

Halo Top Vanilla bean light ice cream

cup(s), or similar product

Uncooked cauliflower rice

cup(s), frozen unseasoned

Food coloring

3 drop(s), green, plant-based

Aerosol whipped cream

2 Tbsp

Instructions

  1. In a blender, blend almond milk and 3 mint leaves on high speed until mint is completely pureed, about 30 seconds. Add ice cream and cauliflower rice and blend until smooth and creamy, about 1 minute. Blend in food coloring, if desired. Pour into a glass; top with whipped cream and 1 mint leaf.
