Instant espresso powder and chocolate chips punch up the flavor of vanilla ice cream in these grown up frozen treats. It is an easy dessert recipe to prepare ahead and have ready to grab from your freezer when the craving strikes, and it has seemingly endless flavor combinations. Stir in rainbow sprinkles, cinnamon chips, toffee bits, chopped nuts, or even a tablespoon of coffee or raspberry liqueur to the ice cream mixture to change up the flavor. If you want to double this recipe, make just one batch at a time so the ice cream won’t get too soft as you’re assembling.

Instant espresso

2 tsp, powder

Light vanilla ice cream

Mini chocolate chips

Instructions

  1. In a small bowl, combine water and espresso powder; chill for several minutes.
  2. In another small bowl, combine ice cream, espresso mixture, and chocolate chips. Spoon 2 tablespoons ice cream mixture on top of 12 wafers; top each with a second wafer. Freeze until ready to serve. Yields 1 sandwich per serving.
