Candied and fresh ginger give a hint of spice to this simple mango dessert that’s ready in 15 minutes. The crystallized ginger, also called candied ginger, is chewy, which makes it a nice contrast to the fresh ginger used in these parfaits. For the fresh ginger, you can remove the skin using a spoon, peeling only as much as you’re planning to use—the rest of the ginger will last longer with the peel on. Use a microplane grater or the smallest holes on your box grater to easily grate the fresh ginger. When buying mango, remember that color is not an indicator of ripeness. Instead, give the mango a gentle squeeze. You don’t want any that are overly soft. Like peaches, mangoes soften as they ripen.

Minced ginger

Instructions

  1. Combine mango, candied ginger, honey, and minced ginger in a medium bowl.
  2. Line up 4 parfait glasses and spoon 1 cup mango mixture into each one; top each with 1 1/2 Tbsp whipped topping and a cookie, broken in half or crumbled over top.
  3. Serving size: 1 parfait
