Fresh and flavorful, this fruity salsa pairs sweet fresh mango with creamy avocado, which is always a winning combination. It goes wonderfully with grilled or roasted chicken, fish, or shrimp. You will likely want to juice and seed the tomato to keep the flavors concentrated in this salsa. We’ve called for a beefsteak tomato here, but you can use whatever variety that you like as there are lots of delicious options to choose from when tomatoes are in season in the summer. Feel free to up the amount of fresh cilantro, and adjust the salt as your taste buds determine is best.
