It gets some heft from the quinoa and chopped chicken—you can use rotisserie chicken for ease—as well as a peppery bite from the freshly grated ginger. Substitute pineapple for the mango, or swap in another whole grain, such as bulgur, wheatberries, farro, or whatever you may have on hand.
