We have a secret ingredient that keeps these lean turkey burgers moist: cauliflower rice. The vegetable bits go into the turkey mixture raw and cook inside the meat as the burgers grill.

Ingredients

Cooking spray

4 spray(s)

Uncooked 99% lean ground turkey

2 pound(s)

Grated Parmesan cheese

cup(s)

Fresh basil

cup(s), finely chopped

Kosher salt

1 tsp

Garlic powder

1 tsp

Uncooked cauliflower rice

3 cup(s)

Plain fat free Greek yogurt

cup(s)

Pesto sauce

cup(s)

Light whole wheat hamburger buns

8 bun(s), toasted

Red onion

8 thin slice(s)

Tomato

8 slice(s)

Lettuce

8 leaf/leaves, large

Instructions

  1. Coat an outdoor grill rack with cooking spray. Preheat the grill to medium-high (about 450°F).
  2. Meanwhile, place the turkey in a large bowl. Add the cheese, basil, salt, and garlic powder; mix with your hands until well combined. Add the cauliflower rice; mix until thoroughly incorporated. Divide the mixture into 8 equal portions, shaping each into a ¾-inch-thick patty.
  3. In a small bowl, whisk together the yogurt and pesto. Arrange the turkey patties on the grill rack. Close the grill lid and grill until cooked through, about 5 minutes per side. Spread 1 tablespoon pesto over the cut side of each top and bottom bun half. Arrange 1 patty on the bottom half of each bun; top with 1 onion slice, 1 tomato slice, 1 lettuce leaf, and top half of the bun.
  4. Serving size: 1 burger

Notes

The turkey mixture will likely be very sticky as you work with it; keep your hands slightly damp to keep the mixture from sticking to your skin.
