Never tried seitan? We prepared this vegetarian protein by rolling it in fiery jerk seasoning and pan-browning it, and then paired it with a delicious hot-sweet mango salsa and simple, cooling potato salad. Pronounced say-tahn, it is a form of protein derived from wheat, that is mild and slightly bitter, but it readily takes on the flavors of the ingredients it is paired with. There are a variety of ready-made seitan products available; you’ll usually find them in the produce section. You can substitute fresh peaches or pineapple for the mango, if you like, or use a spicier chile pepper, like serrano, to really crank up the heat.

Ingredients

Cooking spray

Jerk seasoning

1 Tbsp

Seitan slice

1 pound(s), rinsed and dried, cut into 16 pieces

Mango

1 large, diced

Jalapeño pepper

1 small, diced (don't touch seeds with bare hands)

Fresh lime juice

¼ cup(s)

Red onion

3 Tbsp, chopped, diced

Uncooked red potato

1 pound(s), boiled, cooled and cut into quarters

Scallions

3 medium, sliced

Apple cider vinegar

2 tsp

Olive oil

1 tsp

Instructions

  1. Coat a large nonstick skillet with cooking spray and heat over medium heat. Place jerk seasoning on a plate and roll seitan in seasoning to coat on all sides. Brown seitan in skillet, about 3 to 4 minutes per side.
  2. In a medium bowl, combine mango, jalapeno, lime juice and red onion; cover and set aside.
  3. In a separate bowl, mix potatoes with scallions, vinegar and oil; toss to coat potatoes.
  4. To serve, place 1/4 of seitan on a dinner plate, top with 1/4 of salsa and serve with 1/2 cup of potato salad.
