Granitas are an easy, refreshing frozen treat that is ideal for sweltering summer days. When you use naturally sweet, juicy fruit that’s in season, no additional sugar is needed. The fluffy, snowflake-like texture is what sets granitas apart from traditional snow cones. Luckily they don’t require any special equipment, and can be made with just a metal baking pan. What granitas do require is diligence. The mixture needs to be scraped every 30 minutes with a fork until it is frozen to achieve the proper texture. Before serving, you should give the mixture one last scrape with the fork to freshen it up.

Ingredients

Honeydew melon

6 cup(s), ball(s), or chunks

Fresh lime juice

1 Tbsp

Fresh mint leaves

3 Tbsp, chopped, plus extra for garnish

Instructions

  1. Puree honeydew and lime juice in a large blender or food processor; add mint and pulse just to combine. Pour into a pie plate or 9-inch square pan. Freeze for 30 minutes; stir frozen bits of fruit into center.
  2. Continue to stir and scrape frozen fruit from edges to center every 30 minutes until granita is completely frozen, about 4 hours. Serve garnished with mint.
  3. Serving size: 1 cup
