This dessert is incredibly easy to put together, can be mostly made ahead, and makes a grand impression at the table. The chocolate mousse filling has a slightly tangy, cheesecake-like flavor; it’s spread into a store-bought pie crust and frozen until firm enough to slice, then topped with whipped topping, sliced banana, and pomegranate seeds. If you would like to make the pie farther ahead, you can freeze the chocolate filling for up to one week, but set it out at room temperature for about 30 minutes before topping and serving.

Fat free cottage cheese

Reduced-fat graham cracker pie crust

1 crust(s), 6 oz

Light aerosol whipped cream

Banana

1 large, sliced

Pomegranate seeds

Instructions

  1. Spoon the cottage cheese and vanilla into a food processor, and process on high speed until smooth, about 1 minute, stopping once or twice to scrape down the sides of the bowl. Add the powdered sugar and cocoa powder; process until well combined, about 20 seconds. Spoon the mixture into the pie crust. Cover loosely and freeze until firm, about 3 hours.
  2. Remove the pie from the freezer and uncover. Spoon the whipped topping over the pie, leaving a 1/2- to 1-inch border around the edge. Top the whipped topping with the banana slices and sprinkle with the pomegranate seeds. Cut into 12 slices.
  3. Serving size: 1 slice
