Our pasta salad is classic and streamlined—just a simple mostly-yogurt dressing for creaminess, bell pepper and onion for crunch, and chopped pickles for tangy bursts. It’s a great make-ahead option for a picnic or backyard cookout.

Ingredients

Uncooked macaroni

5 oz

Plain fat free Greek yogurt

cup(s)

Pickle juice

3 Tbsp, dill variety

Light mayonnaise

2 Tbsp

Kosher salt

¾ tsp

Black pepper

½ tsp

Red bell pepper

½ medium, chopped

Yellow bell pepper

½ medium, chopped

Sweet onion

½ cup(s), chopped, finely chopped

Unsweetened dill pickle

cup(s), chopped

Fresh parsley

¼ cup(s), chopped

Instructions

  1. Cook the macaroni in boiling water until tender, 8 to 10 minutes. Drain and rinse with cold water.
  2. Meanwhile, in a large bowl, whisk together the yogurt, pickle juice, mayonnaise, salt, and black pepper. Stir in the bell peppers, onion, pickles, and cooked pasta. Spoon into a serving bowl; sprinkle with the parsley.
  3. Serving size: a scant 1 cup
