This sophisticated spin on everyone’s favorite childhood dip features caramelized onions and fresh herbs. It makes a great partner to crunchy crudité like carrot sticks, radishes, and cucumbers. The key to its rich, savory goodness is to cook the onions slow and on low until they turn golden in color and have developed a deep flavor. Make it for a crowd or to keep in your fridge for mid-day snacks. Not a rosemary lover? It’s equally delish without it. Or stir in some chopped fresh basil or parsley instead. You can also a regular onion, not a Vidalia, if you like your dips less sweet.

Ingredients

Unsalted butter

1 Tbsp

Uncooked onion

1 large, finely chopped

Kosher salt

¾ tsp

1% low fat milk

1 Tbsp

Rosemary

1 tsp, fresh, minced (optional)

Plain low fat Greek yogurt

18 Tbsp, (1 cup plus 2 Tbsp)

Onion powder

¼ tsp

Worcestershire sauce

¼ tsp

Instructions

  1. In a large nonstick skillet, heat butter over medium-low heat. Reduce heat to low and add onion and salt; cook, stirring frequently, until extremely soft and light golden brown, about 20 to 25 minutes.
  2. Stir in milk and rosemary; stir in yogurt, onion powder and Worcestershire sauce. Spoon dip into a serving bowl and chill for an hour or two for flavors to blend. Yields about 3 tablespoons dip per serving.
