Homemade marinades taste infinitely better than store-bought, bottled version. You’ll want to make this light, lemony one the next time you plan to grill or broil fish. It’s suitable for virtually any type of fish: firm, meaty, oily, flaky, sweet and mild. You can blend up a quick batch in around 10 minutes. While you prep the sides for your meal, let the fish soak. For best results, only let the fish stand in the marinade for about 20 minutes; otherwise, its texture might turn grainy. Boil the leftover marinade for 3 to 5 minutes if you plan use it to baste the fish while it cooks.

Ingredients

Olive oil

2 tsp

Fresh lemon juice

¼ cup(s)

Lemon zest

2½ tsp

Table wine

1 fl oz, white

Garlic

1 clove(s), minced

Table salt

½ tsp

Black pepper

½ tsp

Fresh basil

1 Tbsp, minced

Rosemary

1 Tbsp, or tarragon, minced

Chives

1 Tbsp, minced

Instructions

  1. Whisk together ingredients, and pour over fish. Marinate 20 minutes at most. Brush fish with leftover marinade (boiled for 3 to 5 minutes to destroy bacteria) while cooking, if desired.
