This French-country dessert comes in many flavors and textures. Ours is filled with fresh cherries and has a creamy, flan-like consistency. Though cherries are traditional, clafouti can be made with virtually any fresh or unsweetened frozen fruit. Try apples, pears, peaches or nectarines cut into little cubes, or whole berries like raspberries, blackberries or blueberries. For extra decadence, serve with a dollop of whipped topping, ice cream or yogurt. The clafouti will sink in the center as it cools. Since it’s made with eggs and milk, store any leftovers in the refrigerator. It’s delicious eaten cold but you can warm it slightly if you prefer.

8 oz, fresh, pitted, halved, or 8 oz frozen unsweetened whole pitted cherries

Egg

Instructions

  1. Preheat oven to 375°F. Coat 10-inch pie plate with nonstick spray.
  2. Arrange cherries in single layer on pie plate and set aside.
  3. In large bowl, whisk eggs until frothy. Whisk in milk, cognac, vanilla, and salt. Add flour and 1⁄3 cup sugar, a little at a time, whisking each addition until fully incorporated. Pour batter over cherries. Bake for 10 minutes.
  4. Reduce oven temperature to 300oF. Continue to bake until center of clafouti puffs up and tester inserted into center comes out clean, about 35 minutes. Let cool. (The center may fall slightly as it cools.) Dust top with remaining 1⁄4 tsp sugar. Cut into 6 pieces.
