These juicy, flavorful skewers are a light, smoky twist on everyone’s favorite Buffalo wings. Bottled dressings are a nice convenience, but nothing beats homemade. Plus, you control the ingredients. This blue cheese dressing is loaded with lots of flavorful seasonings and made creamy with luscious Greek yogurt for all the yumminess you crave without the fat. Chicken tenderloins cook fast, so keep an eye on them so they don't overcook and dry out. To up the spiciness here, add some cayenne to the melted butter mixture. Serve these skewers over a bed of crunchy greens like romaine or iceberg lettuce. Or serve them deconstructed with an array of raw veggies and the dipping sauce on the side.

Uncooked boneless skinless chicken breast tenderloin

Instructions

  1. To make dip, combine first seven ingredients (yogurt, blue cheese, salt, pepper, Worcestershire sauce, garlic, and chives) in a bowl; chill until ready to use (can be made up to 2 days before serving).
  2. Next, combine salt, garlic, chili powder, and paprika in a small bowl; sprinkle evenly over chicken. Thread each piece of chicken lengthwise onto a 6-inch skewer. (Soak wooden skewers in water for 20 minutes before using to prevent burning.)
  3. Off heat, coat a grill or grill pan with cooking spray; heat over medium-high heat. Cook chicken, flipping once, until cooked through, about 3-4 minutes per side.
  4. When ready to serve, melt butter in a small saucepan over medium-low heat (or in microwave); stir hot sauce into melted butter. Brush cooked chicken evenly with butter mixture; drizzle any remaining butter mixture over top. Serve skewers and vegetables with dipping sauce, sprinkled with remaining chives.
