Turn this salad into a main dish or heartier meal by topping it with a grilled tuna steak or light tuna canned in water, or sliced grilled chicken.

Ingredients

Apple juice

2 Tbsp

Extra virgin olive oil

4 tsp

Apple cider vinegar

4 tsp

Whole-grain mustard

1 tsp

Table salt

½ tsp

Black pepper

¼ tsp

Mixed greens

5 oz

Radishes

4 medium, sliced

Red onion

½ small, thinly sliced

Hard boiled egg

6 item(s), large, large, peeled and quartered

Walnuts

¼ cup(s), toasted and chopped

Instructions

  1. To make dressing, whisk together apple juice, oil, vinegar, mustard, salt, and pepper in large bowl.
  2. Add salad greens, radishes, and onion to dressing and toss to coat. Place salad on serving platter. Top with eggs and sprinkle with walnuts.
  3. Serving size: about 1 cup salad, 1 1/2 eggs, and 1 tbsp walnuts
