We use the traditional Hanukkah latke topping of applesauce to add fruity moisture to this low-fat coffee cake. It's got a lot of flavor thanks to the brown sugar, ground cinnamon, and sour cream. The best part is you don't even need an electric mixer or any other fancy equipment to make it. All you have to do is gently stir the dry ingredients into the wet ingredients just until combined. After letting the cake bake about 40 minutes, be sure to let it cool before slicing. We know it's hard to resist diving into it right away, but it needs a little bit of time to set so the slices stay together.

Ingredients

Cooking spray

All-purpose flour

Packed light brown sugar

¾ cup(s)

Baking soda

1 tsp

Baking powder

½ tsp

Ground cinnamon

1 tsp

Table salt

½ tsp

Fat free sour cream

¾ cup(s)

Vegetable oil

2 Tbsp

Unsweetened applesauce

1 cup(s)

Instructions

  1. Preheat oven to 350°F. Coat a 9-inch square pan with cooking spray.
  2. Stir together flour, sugar, baking soda, baking powder, cinnamon and salt in a large bowl. Stir together sour cream, oil and applesauce in a small bowl. Stir sour cream mixture into flour mixture just to mix. (Do not beat.)
  3. Spoon batter into prepared pan and bake until a toothpick inserted in center comes out clean, about 40 to 45 minutes. Allow cake to cool to warm or room temperature before slicing into 16 pieces.
