Perfect for a weeknight dinner or a small holiday celebration, this vegetable duo offers the best tastes of fall. Using an air fryer to cook the sweet potatoes and Brussels sprouts renders both perfectly done at the same time: The potatoes are creamy with a little bit of exterior crust, and the sprouts are tender with browned, crispy edges. To ensure even cooking, make sure to pause the cooking about halfway through and shake the basket to toss the food around.

Uncooked sweet potato

12 oz, peeled and cut into 3/4-in pieces

Instructions

  1. Preheat air fryer, if needed, to 375°F. In a large bowl, toss Brussels sprouts, sweet potatoes, and olive oil until well coated. Sprinkle with rosemary, salt, garlic powder, and pepper; toss well to coat.
  2. Coat air fryer basket with nonstick spray. Spoon vegetable mixture into basket. Air-fry at 375°F until tender, 15 to 18 minutes, pausing and shaking basket after 8 minutes.
