Ingredients

Carrots, raw

1 medium, sliced into ribbons

Cucumber

¼ individual, medium, sliced into ribbons

Rice Wine Vinegar

1 tablespoon(s)

Caster Sugar

½ teaspoon(s)

Mint, Fresh

2 tablespoon(s), roughly chopped, plus a few leaves to serve

Coriander, fresh

2 tablespoon(s), roughly chopped, plus a few leaves to serve

Sweet Chilli Sauce

2 tablespoon(s)

Reduced fat pork sausages, grilled

4 medium

Hot dog rolls

4 roll(s)

Instructions

  1. In a shallow bowl combine the carrots, cucumber, rice wine vinegar and sugar, then set aside for 10 minutes. Drain, then toss with the chopped herbs.
  2. Use the salad to stuff each roll and top with 1 sausage. Drizzle over the sweet chilli sauce, garnish with the remaining herbs and serve.
