Ingredients

Wholewheat Pasta, dry

240 g

Smooth Peanut Butter

1 tablespoon(s), heaped

Hoisin Sauce

3 tablespoon(s)

Soy Sauce

1 tablespoon(s)

Rice vinegar

1 tablespoon(s)

Sesame Oil

½ teaspoon(s)

Cayenne Pepper

teaspoon(s), level

Yellow pepper

1 medium, finely chopped

Cucumber

½ portion(s), medium, halved, deseeded and chopped

Spring Onions

Instructions

  1. Cook the pasta according to the pack instructions. Drain the pasta, then rinse under cold water. Drain again.
  2. Meanwhile, in a small saucepan, whisk the peanut butter, hoisin, soy sauce, vinegar, oil, cayenne, and 6 tablespoons of water until smooth. Bring the mixture to a boil over medium-high heat.
  3. Transfer the peanut sauce to a serving bowl. Add the pasta and toss to coat. Add the pepper and cucumber and toss well to combine. Top with the spring onions.
