For a quick and easy lunch, this tasty pasta dish is hard to beat.

Ingredients

White pasta, dry

240 g, fusilli

Half Fat Crème Frâiche

4 tablespoon(s), level

Lemon

½ zest(s) of 1, grated

Lemon Juice, Fresh

1 tablespoon(s)

Salmon, grilled

480 g, skinned and flaked

Dill, Fresh

15 g, fronds picked and finely chopped, plus extra to garnish

Dijon Mustard

1 teaspoon(s), level

Instructions

  1. Cook the pasta to pack instructions. Drain, reserving 50ml of the cooking water, and return to the pan.
  2. In a bowl, whisk together the crème fraîche, lemon zest and juice and the mustard. Mix into the pasta with the reserved pasta water to help create a smooth sauce. Gently stir in the salmon and dill, season to taste, then divide between bowls, scatter over the extra dill and serve.

Notes

Boost your fibre intake by swapping the regular fusilli for a wholewheat version, or any other wholewheat pasta.
